I have been dying to make this recipe for awhile because of the lovely story Dorie tells about them. If ever a cookie could inspire world peace, these truly would be the ones. So, I think you have to go into making these cookies with the mind set of "everything will work out fine". I worked quickly without over thinking the recipe and things turned out well. Normally, I would have a little panic attack when I try to slice cookie dough and it breaks apart. Instead, I did what Dorie advised and pushed the dough back together and sent it off into the oven.I had just made some pumpkin ice cream which made for fun little sandies with the cookies. The pumpkin ice cream recipe can be found here. It is a very simple recipe and was great the first day- however the texture got a little too firm on the second day so I'm not sure I would make it again.

Ooh, I first thought that pumpkin ice cream was some kind of peanut butter, which would also be good, but the ice cream looks and sounds great sandwiched in these cookies. Love the chocolate oozing in the cookie on the last picture! Yu-um!

I would love that pumpkin ice cream and the cookies are already one of my favorites. I've made pumpkin frozen yogurt and it totally has to be eaten the first day because after that it's rock hard. Great job!
