Lemon Walnut Sour Cream Pound Cake, as was selected by Raeann of Basically, Baby Boots, turned into Spike is still made at the grocery store and refuses to leave the house oh my darling, Clementine Pecan Pound Cake. I had a few clementines rolling around in the fridge, looking to be needed, and the end of a bag of pecans just right for the recipe.
I thought it odd that the recipe called for shortening instead of all butter, but went with it and all was fine. I think the sour cream had something to do with an overall lovely taste and easy recipe.
I'm in a fight with my mini loaf tin. As you can see, it insists on browning the sides faster than the inside cooks. I've tried telling the pan that no one likes their mini loaves over browned on the outside but it will not listen. The full recipe here makes one large loaf or five minis that cook for 35 minutes. You can sub oranges, clementines, maybe even grapefruit for the lemon zest and juice and pecans for the walnuts.
