Amaretto Pound Cake
Yesterday was one of those mondays where, by the end of the day, you feel like you've worked a whole week already. I probably should have just relaxed when I finally got home from work but instead I started a mountain of laundry, organized a bunch of crap and then decided it was time to start this week's TWD recipe.
With the AC and the oven competing, I decided to halve the recipe and make it in this extra long loaf pan I have so as to reduce oven time. This pan is probably meant for something special but it looked fun at Ikea so I bought it and now use it maybe once a year for whatever. I subbed amaretto for the rum in the recipe. I like rum but I like amaretto even better. Last night the cake was okay- just had a small bite before bed. This morning, once properly cooled, the cake had a much richer taste. Very nice indeed. I suspect the pan may be for a Pullman loaf.
We all have those types of pans-mine happens to be that mini Nordicware bundt pan. I use it about 1-2 times a year. I like the length of that loaf. Amaretto sounds nice!

Amaretto... that's next on my list. Grand Marnier wasn't too bad either! Mine was in the oven on an 83 degree day. Could have been worse - but I agree - the cake was much better the following day! Love the long loaf pan as well!
lol i thin ive seen the same loaf pan @ ikea too- i had to refrain from buying it :)
What a great pan size. Pefect for when you need lots of slices and don't want to carry a lot of cake. LOVE Ikea. Too far away.

What a fun loaf pan! With summer here, I think twice about turning on the oven, so baking in a nice slim pan like this makes a lot of sense.

Amaretto sounds great! I used hazelnut syrup instead of rum.
