Yesterday was one of those mondays where, by the end of the day, you feel like you've worked a whole week already. I probably should have just relaxed when I finally got home from work but instead I started a mountain of laundry, organized a bunch of crap and then decided it was time to start this week's TWD recipe. With the AC and the oven competing, I decided to halve the recipe and make it in this extra long loaf pan I have so as to reduce oven time. This pan is probably meant for something special but it looked fun at Ikea so I bought it and now use it maybe once a year for whatever. I subbed amaretto for the rum in the recipe. I like rum but I like amaretto even better. Last night the cake was okay- just had a small bite before bed. This morning, once properly cooled, the cake had a much richer taste. Very nice indeed.
