
Yes, this is banana cake not banana bread. Not quite sure of the difference- seems a bit lighter than banana bread. This recipe can be altered a million different ways...I went with a single layer cake with bittersweet chocolate chips and a bit of coconut.

Good for dessert or leftovers for breakfast. Or if you had a boat, you could eat this cake on a boat. I don't have a boat. If I did, I would have banana cake boating weekends all the time.

I was very tempted to add chocolate chips too but I left them out so I could justify eating the muffins for breakfast. I wish I had a boat, especially given that I live on the coast. Oh well, someday maybe - if I hit the lottery :)
