Oatmeal Breakfast Bread

This should have been a complete disaster. I set out to make this this bread after a long day yesterday. I didn't have a key ingredient, applesauce, so I thought I'd just add some yogurt and apple juice. The batter seemed far to liquid to ever really come together. I also didn't have any dried fruit so the bread was a very plain oatmeal with more oatmeal in the topping.
Then, with great surprise to me, it baked up nicely in the amount of time it was supposed to take. AND it tasted good.

I was suspicious when I saw how thin the batter but was delighted when it turned out perfectly. Your bread looks wonderful!

i left out the fruit too, and almost subbed apple butter before finding a miracle jar of applesauce in the back of my fridge! it looks great!

don't you just LOVE when you have almost NO expectations for something to bake up but then it does AND it tastes good too? i find these moments help to counteract the high hopes/being let down moments.

It seems many of us made substitutions and the bread came out. Perhaps, it should be called, Magic Bread. Yours looks terrific.

Disasterously wonderful I would say! Love the sprinkled oats on top - what a great idea. Truly looks like an "oatmeal loaf"! I kept the fruit and added liquor. :) Glad it turned out for you!
